Tofu Ceviche Recipe Inspired By Club Med SandPiper Bay

Staying at the Club Med Sandpiper Bay is perfect for the active couple looking to enjoy an array of sports and be active. But, it is also perfect if you just want to enjoy a good meal, hit the pool, and get in some beach time. Between the golf, tennis, volleyball, yoga class, water skiing, and of course, a whirl on the trapeze, you will want to take a break and enjoy a spa like meal. 

The chef at Club Med Sandpiper Bay is Chef Cipollo; no stranger to well-traveled guests who expect a fresh meal filled with goodness to fuel them. Chef has spent time in some world-renowned kitchens, including an international Ritz Carlton, the Boca Club, and on Mediterranean cruise ships. The food overall at Club Med Sandpiper is designed to be fresh and filling, while keeping you feeling good. Being active in the warm Florida sun requires dishes that are light and refreshing.  

One such meal that Chef Cipollo demonstrated was his Tofu Ceviche. I took notes just so I could replicate it at home. The ingredients may change due to what is fresh locally, but they are available at most markets around the world.  

Club Med Sandpiper Bay Inspired Tofu Ceviche

Ingredients: 

1/2 cup each diced 

Extra Firm Tofu

Papaya

Cactus – peeled 

Mango 

Pear 

Hearts of Palm

1 small Jalapeno – seeded, rinsed, and diced

1 tbsp fresh grated ginger

1/2 cup fresh citrus juice, like a combination of orange and lime

There is one simple step to this recipe...Combine all of the ingredients and enjoy. 

You can serve with fresh tortilla chips or over some greens. I often serve it for lunch wrapped in lettuce leaves. You can make this recipe a few hours in advance, so the tofu absorbs the flavors, but you can also serve it immediately.

The Club Med Sandpiper Bay is the only Club Med in the United States. Located just outside of West Palm Beach, getting there is easy. There is truly something for everyone to do or you can do nothing at all. The staff is amazing and very attentive. If traveling without kids, I suggest a room near the adult pool and if with family, a first floor family suite with two bedrooms is perfect. Just request a water-facing room to enjoy the view. 

Club Med Sandpiper Bay is an all-inclusive property, with an amazing kids' club that runs into the evening, so the parents can enjoy a date night. Most activities are also included. We just love the outside spa quiet area in a private courtyard that serves fresh iced tea and dried fruits and nuts. Just make sure you book the treatments in advance!
