My Freezer Food Prep Game Is On Point, How About Yours?
Making stock and broth. (No, they're not the same!) One of my favorite food things to do. I started out making them using my large stock pot, but I soon got with it and began using my slow cooker. The results, simply amazing. It's so much easier to prepare stock/broth this way, and for the effort I doubled my yield of my favorite go-to flavor enhancer.
When I have my stock or a nice homemade broth at my disposal, the sky's the limit in terms of what yummy meals I can prepare for my family. But my little urban city dweller freezer can only hold so much, getting full so fast once I start hoarding away my stock for future meal construction like a squirrel rapidly gathering nuts for the winter.
But alas, my stock isn't the only flavor booster I store in my freezer. I also freeze the chicken fat skimmed from the top of my broth (we're talking serious food boosting gold right here), various homemade pestos, sofritos and a nice epis (Haitian/Caribbean version of a sofrito) made with an array of veggies and herbs to avoid wasting them, leftover veggies for vegetable soup, mushrooms (which I never seem to use fast enough and hence used to throw too many of them away), tomato sauce, leftover pasta (because sometimes, no matter how hard I try, I make too much), and even chipotles in adobo (because even though it's in a little can I never succeed at using up the whole thing when making a meal). And of course, the chicken carcasses I need to make my stock and broth in the first place.
There's probably more food that I could freeze to prevent wasting food, which I try super hard to avoid, like bread. But first I need to get over the tick in my head that prevents me from eating bread that I know has been frozen. (Sorry. I just can't. I'll work on it one day.)
As I cook for myself and my family every day, my food prep status feels totally on fleek (yeah, I can still say 'on fleek' if I want to). But sometimes I wonder — am I forgetting something? Am I overlooking a glorious food item that I should be freezing to enhance my richer than rich food life even more?
The answer I arrive at is always the same — no, not that I can think of.
