Chef Jonathan Sawyer Sets Sail
Jonathon Sawyer, executive chef and owner of French gastropub The Greenhouse Tavern in Cleveland is setting sail again with Holland America Line. Sawyer is hosting cooking demonstrations on the Zaandam during an eight-day cruise that travels between Seward, Alaska, and Vancouver, British Columbia, from Aug. 19 to 26.
Sawyer, who also owns Noodlecat, an American-Japanese mash-up that serves ramen in Cleveland, has also appeared on television programs, such as Dinner: Impossible, Iron Chef America, and The Best Thing I Ever Ate.
When the Zaandam is at sea, Sawyer will host two 45-minute cooking demonstrations in the ship's Culinary Arts Center. The menu for this year is still in development, but last year Sawyer made kingfish en papillote with hiramasa, sustainable kingfish from Australia, wild mushrooms, chablis, artichokes, potatoes, lobster claw, and thyme.
The Zaandam includes the Rotterdam dining room which serves five course meals, the reservations-only Pinnacle Grill, the all-day Lido Restaurant, and coffee shop Explorations Café.
