Brandon Fortune Takes Helm At L'Auberge Del Mar
Brandon Fortune has been appointed Executive Chef at L'Auberge Del Mar's Kitchen 1540 restaurant.
A native of the southeast, Fortune draws culinary inspiration from his southern upbringing and world travels to create new menu items. After graduating from Le Cordon Bleu Atlanta, he began his culinary career at the five-diamond, five-star Four Seasons Hotel Atlanta before heading west to hone his skills at the Grand Del Mar in San Diego. In 2010, Fortune opened Aquamore, his own tapas restaurant in La Jolla; he then became an executive chef consultant the Carlsbad's Green Dragon Tavern in February of last year. Now, the chef brings his southern-inspired dishes to Kitchen 1540's menu, including shrimp and grits; chicken and dumplings; curried pork gumbo; fried green tomatoes, and smoking scallops.
Opened in 2008, Kitchen 1540's décor is modern and relaxed with white vaulted ceilings, an elegant fireplace, contemporary furniture, and a spacious outdoor patio that allows guests to enjoy ocean breezes and features private cabanas for intimate dining.
