Chocolate chip, pumpkin, and cinnamon pancakes are delicious, but if you’re looking for a recipe that will take your pancakes over the top, look no further than this simple one. Make pineapple upside down pancakes.
Do you love pineapple-upside down cake? If you do, you’ll love this recipe. You can cut a few corners and use pre-made pancake mix, but we recommend taking the extra time to make your pancakes from scratch.
Pancake Mix Ingredients:
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
¼ cup milk
3 tablespoons butter, melted
Maraschino cherries, for garnish, optional
In a bowl, sift the dry ingredients (all-purpose flour, baking powder, salt, sugar). In the bowl, make a well in the center and pour in the milk, egg, and melted butter. Mix all of the ingredients together until it’s smooth. You can add in vanilla or other extracts if you’d like.
For the pineapple upside down pancakes make them as you would these Banana Pancakes, and when they are ready to flip add in 1 pineapple slice. Once each pancake is done cooking on the second side, you’ll have your delicious pineapple upside-down pancakes. You can even add maraschino cherries to top it off.
