We caught up with chef Kris Lincoln to learn more about how his travels have influenced his creative process. Lincoln is the executive chef at SolToro Tequila Grill at Mohegan Sun Casino Resort in Uncasville, Conn., which is a cantina-style restaurant that serves contemporary Mexican food and a signature cocktail menu. Before becoming a chef, Lincoln worked in the coroporate world. He eventually realized that food was his true passion and obtained a Culinary Arts Degree from the Center for Culinary Arts in Cromwell, Conn. Before coming to SolToro, Lincoln worked in several kitchens and was the executive chef at Morton's The Steakhouse in Hartford, Conn.
The Daily Meal: What has been your most inspirational food experience while traveling?
Kris Lincoln: Traveling to Sicily at age thirteen and eating sea urchin right out of the shell with crusty bread. You can’t understand the importance of fresh food until you experience it firsthand.
TDM: What’s your favorite kitchen souvenir from your travels?
KL: I love my Mickey Mouse whisk from Disney World. Whenever I use it it reminds me of spending time on vacation with my family
TDM: If you could eat your way through one country, which one would it be and why?
KL: Thailand. I love the clarity and power of Thai food here in the U.S., so I can only imagine how wonderful it is in the country.
