This vegan take on the classic soft serve ice cream recipe is a great way to enjoy your favorite frozen treat while on a diet. It's simple to make and can be easily tadapted to any of your favorite ice cream flavors.

Ingredients
  • 3 medium frozen bananas, sliced
  • 3 tablespoon unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • pinch of salt
Directions
  1. Combine the frozen banana slices, cocoa powder, vanilla, and salt in a food processor or blender. You may need to add add 2-3 teaspoons of your milk of choice in order for it to blend more smoothly. If your bananas are really frozen, you may also have to thaw them a bit before blending.
  2. Once the ingredients are thoroughly blended and smooth, use a soft spatula to scoop the mixture into a bowl or cone. Top with your favorite toppings of choice* and enjoy!
