This brine marinade is used at BLT Steak for the herb-Parmesan crusted veal chop. Simple and easy on hand ingredients make it a no-brainer next time you are preparing your favorite chop.

  • 2 gallons water, warm
  • 2 cup sugar
  • 2 cup salt
  • 3 bay leaves
  • 2 heads garlic, split
  • 1/2 bunch thyme
Directions
  1. Combine all of the ingredients together and add to veal chop for at least 6 hours prior to cooking.
