Salute Trattoria Italiana, located in the Red Rock Casino Resort and Spa in Las Vegas, inhabits a welcoming open space awash with complimentary colors of orange and blue, giving the senses an initial pop of color that translates to an explosion of flavors on the palate. Salute has made a new home in the former space of Terra Rossa.

The flair and finesse of this fashionable dining establishment is one of the Clique Hospitality Group's newest projects bringing the expertise of seasoned native Italian chef Luciano Sautto to the masses with dishes that he developed in southern Italy and cultivated through time, experience and knowledge.

After honing and perfecting his skills in of some of the finest restaurants throughout Italy and the U.S. — most recently, as the former executive chef for Bianca at the Delano in Miami — chef Sautto has now secured the helm of Salute with great enthusiasm and preparedness to launch this brand as a must-go place for Italian fare.

To start your culinary adventure, make sure you begin with one of chef's signature antipasti, beginning with the zucchini Flowers with ricotta, amaretti, and pistachio pesto. The delicate flowers are fried ever so lightly to insulate the flavors and texture of the creamy, mellow ricotta melded with the bright acidity of the pesto.

Crispy arancini is another featured appetizer which is known for the distinctive round shape.  Known in Italian as "little orange" these round, lightly fried panko coated rice balls, filled with fontina and ricotta cheese. These crunchy golden nuggets contain a delightful, crunchy, creamy aspect in every bite.  No wonder arancini continue to be popular snack food all year round at most Sicilian restaurants.  Although Salute offers an ample antipasti menu, the pizza all'acqua, will please everyone, including the most particular eater featuring a crispy thin crust, San Marzano tomatoes, and bright green fior di latte basil.  

Pastas and entrées are equally hearty and yet rustic, including the traditional veal Marsala, chicken piccata, and for the meat lover the all-natural Tuscan steak adorned with a touch of Italian herbs and a hint of balsamic chili butter. The numerous pasta dishes are hand prepared, and delivered with the flare and finesse that only a seasoned Italian native would dare to present to discriminating diners. A culinary highlight of Salute is the Table Side Salute Signature Pasta. The vodka sauce and house-made fettuccini are prepared together table side for your enjoyment while creating an anticipated pasta course with a more personal touch. For those looking for fare from the sea, the whole salt roasted or grilled branzino is another signature dish that will sure to please.
