White Corn and Jalapeño Salsa Recipe
This quick and easy seasonal recipe for salsa is sure to be a refreshing summer hit with guests.
- 1 ear white corn, husked
- 5-6 grape tomatoes, diced into ¼-inch pieces
- ½ cucumber, seeded, diced into ¼-inch pieces
- 1 jalapeño, seeded, diced into 1/8-inch pieces
- Juice of 1 lime
- Salt and pepper, to taste
With a chef's knife, remove all the kernels from the cob using a downward slicing motion into a shallow bowl.
Combine the remaining ingredients in the same bowl. Mix well. Season to taste with salt and pepper. Serve immediately.
