  • 1 ear white corn, husked
  • 5-6 grape tomatoes, diced into ¼-inch pieces 
  • ½ cucumber, seeded, diced into ¼-inch pieces
  • 1 jalapeño, seeded, diced into 1/8-inch pieces
  • Juice of 1 lime
  • Salt and pepper, to taste


With a chef's knife, remove all the kernels from the cob using a downward slicing motion into a shallow bowl.
Combine the remaining ingredients in the same bowl. Mix well. Season to taste with salt and pepper. Serve immediately.
