- 1 Cup simple syrup
- 1/2 Cup lime juice
- 1 Ounce orange juice
- 4 Cups fresh watermelon juice
- 3 Ounces blanco tequila
- 6 sheets of gelatin, bloomed
- Cucumber segments
- Pineapple chunks
Mix all ingredients, minus gelatin sheets. Dissolve gelatin sheets over medium heat and remove from heat. Add in 1/2 cup of the fruit mixture to the gelatin and stir until the gelatin has incorporated into the base.
Return the 1/2 cup with gelatin to the larger punch mixture and stir thoroughly. Fill ice pop mold and freeze until frozen.
To garnish, mix kosher salt and watermelon Pop Rocks. Dip corner of the pop in simple syrup and coat with the Pop Rock salt.
