Veggie Garden Cups
Ingredients
  • 2 ripe avocados, pitted
  • juice of ½ a lime
  • pinch of salt
  • 1 bag matchstick carrots, preferably bolthouse farms
  • 1 large carrot, peeled, preferably bolthouse farms
  • 1 persian cucumber
  • 4 cherry tomatoes
  • 8 breakfast or red radishes, sliced in half
  • 8 sugar snap peas
  • 1 red bell pepper
  • 1 celery stalk
  • ½ cup broccoli florets
  • 4 wooden skewers, cut in half
  • 4 small plastic cups
Directions
  1. Spoon the avocado flesh into a bowl along with the lime juice and salt. Use a fork to mash the avocado until smooth.
  2. Fill each small plastic cup about halfway up with matchstick carrots.
  3. Spoon a quarter of the avocado mixture on top of the matchstick carrots in each cup.
  4. Cut the carrots and cucumbers into 2-inch lengths. Use a paring knife to make 4 to 5 small notches around the carrot and cucumber pieces. Then slice each one into ½-inch slices to form flowers.
  5. Place the carrot flowers, and the cucumber flowers topped with cherry tomatoes onto wooden skewers.
  6. Cut the red bell pepper and the celery into sticks about the same length as the sugar snap peas.
  7. Place the carrot and cucumber flowers, sliced radishes, sugar snap peas, red bell peppers, and celery into the avocado mixture to create a garden.
  8. Then place the broccoli florets in the open spaces to create grass.
