If you want to go meatless for game day, we have just the recipe. This veggie burger is perfect for grilling at tailgates or topping your salad.
Ingredients
- 1/2 Cup onion
- 1 clove garlic, minced
- 1 Cup yellow corn
- 1/4 Cup spinach, chopped
- 1 can pinto beans
- 1 Tablespoon lime juice
- 3 Tablespoons salsa
- 2 Teaspoons cumin
- 2 Teaspoons chili powder
- 1/4 Teaspoon salt
- 1/8 Teaspoon pepper
- 1 Cup oats
- 1/4 Cup cashews, chopped
- 1/4 Cup cilantro
- Ball Park Burger Buns
Directions
Heat two tablespoons of olive oil in a pan on medium heat. Toss in the onions, garlic, corn, and spinach until softened.
Transfer the mixture to a food processor and pulse with beans, lime juice, salsa, cumin, chili powder, salt, and pepper until combined. Then, add in oats, cashews, and cilantro; pulse.
Form into balls and flatten into patties for grilling.
Transfer the patties to a pan and grill for two to three minutes on each side.
Let cool for a couple minutes and put in between Ball Park Burger Bun with your favorite toppings.
