These vegetable boats are made of sweet peppers filled with healthy hummus and a Cheddar cheese sail. Even the pickiest of eaters will enjoy them! Recipe courtesy of Bolthouse Farms.
Halve the peppers and scrape out the insides.
Fill the hollow peppers with hummus.
Cut the cheese slices into triangles and place one end of each triangle in hummus.
Serve on a blue plate and sail them around the “ocean” before enjoying.
