Vegetarian Chickpea Burgers

Grilling and barbecuing don't have to be all about burgers, steaks, and hot dogs; vegetarian burgers are easy to make and easily customizable. Vegetarian burgers can be made using virtually any mix of beans and vegetables; whatever you have on hand will work. This recipe uses chickpeas, onions, and cumin; after the patties are grilled they're super smoky and flavorful.

Ingredients

For the Burgers

  • 1 15.5-ounce can garbanzo beans, drained and rinsed
  • 1 small yellow onion, diced small
  • 1 clove garlic, minced
  • Zest of 1 lime
  • 1 handful cilantro leaved, chopped
  • 2 Teaspoons cumin
  • ½ Teaspoon cayenne
  • Salt, to taste
  • Freshly-ground black pepper, to taste
  • 1 large egg, lightly beaten
  • 1½ - 1¾ Cup breadcrumbs, such as Panko

For Serving

  • ½ Cup plain yogurt
  • Juice of 1 lime
  • 1 handful of cilantro leaves, chopped
  • Salt, to taste
  • Red onion slices
  • 4 miniature whole-wheat pitas

Directions

For the Burgers

Combine all the ingredients in a large bowl. Use your hands to mix, mashing some of the beans as you go. Form the mixture into 4 patties.

Grill the patties until they are cooked through, about 3—4 minutes per side.

For Serving

In a medium bowl, combine the yogurt, lime juice, and cilantro. Season with salt, to taste.

Top the grilled burgers with the yogurt sauce and red onion slices. Serve on miniature whole-wheat pita.
