Vegan Soft Serve Ice Cream
This vegan take on the classic soft serve ice cream recipe is a great way to enjoy your favorite frozen treat while on a diet. It's simple to make and can be easily tadapted to any of your favorite ice cream flavors.
**Topping ideas include walnuts, almonds, crushed Oreo cookies, berries, and chocolate chips
Note: Add 3-5 tablespoons of your favorite nut butter or up to 3 drops of peppermint extract to give your soft serve a different flavor palate.
- 3 medium frozen bananas, sliced
- 3 Tablespoons unsweetened cocoa powder
- 1 Teaspoon pure vanilla extract
- Pinch of salt
Combine the frozen banana slices, cocoa powder, vanilla, and salt in a food processor or blender. You may need to add add 2-3 teaspoons of your milk of choice in order for it to blend more smoothly. If your bananas are really frozen, you may also have to thaw them a bit before blending.
Once the ingredients are thoroughly blended and smooth, use a soft spatula to scoop the mixture into a bowl or cone. Top with your favorite toppings of choice* and enjoy!
