Vegan Avocado Ceviche

All the best flavors of ceviche, minus the fish

You won’t miss the seafood in this quick and easy recipe for a plant-based ceviche that is full of zesty flavors.


For the Vegan Avocado Ceviche

  • 1 ripe avocado, halved, pitted, peeled, and cubed
  • 1 Cup cauliflower, diced
  • 2 Tomatoes, diced
  • 1/3 Cup red onion, finely diced
  • 1 Tablespoon jalapeño pepper, minced
  • 1 Clove garlic, minced
  • 1 Tablespoon fresh cilantro, chopped
  • 1 Tablespoon lime juice
  • 1/4 Teaspoon salt
  • 1 Tablespoon olive oil


For the Vegan Avocado Ceviche

In a large bowl, combine avocado, cauliflower, tomatoes, onion, jalapeno, garlic, cilantro, lime juice, salt and olive oil.

Transfer to a serving bowl.  Serve with homemade pita chips.
