You won’t miss the seafood in this quick and easy recipe for a plant-based ceviche that is full of zesty flavors.
Ingredients
For the Vegan Avocado Ceviche
- 1 ripe avocado, halved, pitted, peeled, and cubed
- 1 Cup cauliflower, diced
- 2 Tomatoes, diced
- 1/3 Cup red onion, finely diced
- 1 Tablespoon jalapeño pepper, minced
- 1 Clove garlic, minced
- 1 Tablespoon fresh cilantro, chopped
- 1 Tablespoon lime juice
- 1/4 Teaspoon salt
- 1 Tablespoon olive oil
Directions
For the Vegan Avocado Ceviche
In a large bowl, combine avocado, cauliflower, tomatoes, onion, jalapeno, garlic, cilantro, lime juice, salt and olive oil.
Transfer to a serving bowl. Serve with homemade pita chips.
