Chef Kristine Mana-ay has put a gourmet spin on the classic with The Windsor's Truffle Grilled Cheese. Pair it with a selection of craft beers or seasonal cocktails such as The Half Windsor, made with cucumber and lime it is the perfect cocktail for spring.
Preheat the oven to 350 degrees F.
Assemble the grilled cheese.
Melt 2 tablespoons of butter in an ovenproof skillet over medium heat.
Add the sandwich and cook until golden on the bottom.
Flip and cook until golden on the other side, about 2 more minutes.
Transfer the skillet to the oven and cook until the cheese is melted, 2 to 3 minutes.
Drizzle the truffle oil on top.
