Ingredients: 1 ounce rum, preferably mount gay eclipse; 1 ounce dark herbal liqueur; 1 ounce pineapple juice; 3/4 ounce lime juice; 3/4 ounce cane syrup; splash of sparkling red wine

OK, so may be getting a total eclipse of the sun, but who can resist tying in this 1983 Bonnie Tyler hit? Fall in love all over again with rum with this gorgeous cocktail.This recipe is courtesy of Mount Gay Rum.

Ingredients

1 ounce rum, preferably mount gay eclipse
1 ounce dark herbal liqueur
1 ounce pineapple juice
3/4 ounce lime juice
3/4 ounce cane syrup
splash of sparkling red wine

Directions

Shake all ingredients (except sparkling red wine), strain over large cube in a double rocks glass and top with sparkling red wine.
