Recipe Courtesy of House Foods

You won’t have to feel guilty about eating this version of a holiday class. Fruitcake can be dense, but the tofu gives it a light, smooth texture, and also boosts its protein content.

  • 2 1/2 Cups cake flour
  • 2 Teaspoons vanilla extract

  • 3 Teaspoons baking powder
  • 1/4 Teaspoon salt
  • 1/4 Cup water
  • 1 Cup dried cranberries
  • 1 Cup chopped walnuts
  • 1/2 Cup dried apricots, chopped
  • 1/2 Cup dried apples, chopped
