Swizzles, named after the sticks used to produce rum in the Caribbean, have been savored for more than 200 years and finally, Sailor Jerry’s Paul Monahan gave this classic a tiki makeover. His take is rich in spicy anise bitters, a dark red wine from Portugal that’s often paired with dessert and yes, more rum.
Ingredients
- 1 1/2 parts rum (we used Sailor Jerry)
- 1/2 part port
- 1 part pineapple juice
- 1/2 part simple syrup
- 1/2 fresh lime juice
- 2 dashes anise bitters
- 2 dashes house bitters
- Pineapple slice
Directions
Combine ingredients, shake, and strain over crushed ice. Swizzle top with ice. Garnish with a pineapple slice and an umbrella.
