Thirty Notes Cocktail


Thirty Notes rum cocktail is a rum sour of sorts, except that the sugar component is a jam made using a local stout, some spices, and citrus peel. It was concocted at The Oakland Art Novelty Company in the Detroit area. Garnish it with a cinnamon stick wrapped in an orange peel.


For the cocktail

  • 2 Ounces El Dorado 12
  • 1/2 Ounce lemon juice
  • 6 drops orange bitters
  • 3/4 Ounces Dragon's Milk Jam

For the Dragon's Milk Jam

  • Four 12-ounce bottles of New Holland Dragon's Milk
  • 4 2/3 Cups white sugar
  • 2 Ounces lemon juice
  • 2 split vanilla beans
  • 10 allspice berries
  • 3 whole cloves
  • 2 star anise
  • Zest of one orange
  • 1 package Natural Fruit Pectin


For the cocktail

Shake all ingredients and strain into a coupe. Garnish with a cinnamon stick wrapped in an orange peel. 

For the Dragon's Milk Jam

Combine all ingredients except the Natural Fruit Pectin. Bring to a boil, cool overnight. Dissolve Natural Fruit Pectin according to package instructions and add to jam mix.
