Try this imitation crab salad with spinach and red onions.

Ingredients

For the dressing:

  • 1/2 Cup olive oil
  • 4 Tablespoons fresh lemon juice
  • 1/2 Teaspoon lemon zest, grated
  • Salt, to taste
  • Pepper, to taste

For the salad:

  • 1 Cup baby spinach
  • 1/2 Cup red onions, slices
  • 1/2 Pound imitation crab meat

Directions

For the dressing:

Whisk all the ingredients together in a bowl.

For the salad:

Mix all of the ingredients together in a bowl. Stream in dressing to taste. Serve.
