Ingredients
For the dressing:
- 1/2 Cup olive oil
- 4 Tablespoons fresh lemon juice
- 1/2 Teaspoon lemon zest, grated
- Salt, to taste
- Pepper, to taste
For the salad:
- 1 Cup baby spinach
- 1/2 Cup red onions, slices
- 1/2 Pound imitation crab meat
Directions
For the dressing:
Whisk all the ingredients together in a bowl.
For the salad:
Mix all of the ingredients together in a bowl. Stream in dressing to taste. Serve.
