Mix cream with sweet potato and layer the pizza dough with a very thin layer. Add ham slice and the au gratin and extra virgin olive oil.
Bake on a pizza stone for 4 min at 500 degrees. Take pizza out of oven and crack an egg over it and return to oven for another 2 minutes. Finish with the goat cheese.
