Superfood Pie
If you have been making apple pie for the past several years, try something new, exciting, and healthy. This superfood pie combines fresh berries and a flaky, whole-wheat crust.

Ingredients
- 2-4 smoothie packs, thawed (such as sambazon original smoothie packs)
- 5 tablespoon all-purpose flour
- 1/2 teaspoon sea salt
- 1/2 cup raw sugar
- 7 cup fresh or frozen mixed berries
- 1 whole-wheat frozen pie crust, thawed
- 2 tablespoon coconut oil
Directions
- Preheat the oven to 375 F and prepare a pie dish.
- In a bowl, add 2 to 4 packs of thawed smoothie packs. Combine with flour, salt, and sugar and stir gently until smooth.
- Take half of your thawed pie crust and line the dish. With a fork, repeatedly poke the bottom of the dough. Half-bake your pie curst for 10 minutes in a pre-heated oven. Remove and allow to cool.
- Once cooled, pour your frozen berries into the pie crust and spread in an even layer. Over the top, drizzle your acai mixture, evenly coating all the fruit. Over the top, evenly distribute chunks of coconut oil.
- To cover the pie, either tear large chunks of thawed dough over the top, or place the remaining dough over the top. Cut holes to release steam in the top.
- With a pastry brush, lightly brush the top of your pie with liquid coconut oil. Sprinkle with 1 tablesp of raw sugar.
- Bake for about 40 minutes, or until the berries are bubbling and crust is golden brown. Let cool for 30 minutes before serving with coconut ice cream.
