Ingredients

For the Cupcakes

  • 3 Cups All Purpose Flour
  • 1 1/2 Teaspoon Baking Powder
  • 3/4 Teaspoons Salt
  • 1 1/2 sticks Butter / Unsalted and Softened
  • 1 1/2 Cup Pyure Confectioner's Stevia Blend
  • 4 Large Eggs
  • 2 Teaspoons Vanilla Extract
  • 1 1/4 Cup Milk

For the Icing

  • 1 1/2 Cup Pyure Confectioner's Stevia Blend
  • 1/2 Cup All-Purpose Flour Sifted
  • 2 Tbl + 1/4 cup Butter Unsalted and Softened
  • 1/4 Cup Milk
  • 1/2 Teaspoon Vanilla Extract
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon Lime Juice
  • Green Food Coloring

To Make Pyure Confectioner's Stevia

Directions

For the Cupcakes

1. Preheat oven to 350°F. 2. Line cupcake pan with paper liners, or use aluminum cupcake holders with liners on a baking sheet, and set aside. 3. In a separate bowl, sift the All-Purpose Flour and add the Baking Powder and Salt, whisk and set aside. 4. In another mixing bowl and Kitchen Hand or Stand Mixer, whisk together Pyure Confectioner’s Stevia Blend and Softened Unsalted Butter, until cream is fluffy and lifted. 5. Add each egg, mixing in between each one, and beat in the Vanilla Extract. 6. Be sure to scrape down the sides and bottom of the bowl. 7. Next, add in the Flour Mixture and Milk little by little (ensuring to end with the flour mixture after the last bit of milk has been added), mixing and incorporating throughout. 8. Scrape down the sides and bottom of the bowl and mix until well combined. 9. Separate batter evenly, filling cupcake liners half way to 2/3 full of batter. 10. Bake on center rack for 15 minutes, or until the top of the cupcake springs back when pressed lightly with your finger. 11. After baking, transfer and cool on a wire rack. Ensure cupcakes are completely cooled before adding icing.

For the Icing

1. In a separate bowl, sift together Pyure Confectioner’s Blend and All-Purpose Flour and set aside. 2. With a cleaned and dried Kitchen Hand or Stand Mixer, whisk Softened Unsalted Butter and Vanilla Extract until thoroughly combined. 3. Next, alternatingly add in Milk and Pyure Confectioner’s-Flour mixture little by little until fully combined, ensuring to end with the last bit of the dry mixture. 4. Lastly, add in your Lemon Juice, Lime Juice, and Green Food Coloring. Of course, feel fun and free to adjust according to your own tarty-tastes and visual preferences!

To Make Pyure Confectioner's Stevia

Blend Pyure All-Purpose Stevia in a High-Speed Blender or Coffee Grinder, until fully powdered. Done! Very simple.
