If you want a break from the traditionally sweet banana bread, this is the bread for you. Have no fear, though: even though this bread leaves out the sugar and oil, it packs in plenty of sweetness thanks to the overly-ripe bananas and a touch of cinnamon.

Ingredients
  • 2 large eggs
  • 1 1/2 cup well packed, mashed ripe bananas
  • 1/2 cup apple sauce
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
Directions
  1. Preheat the oven to 350 degrees and grease a loaf pan. In a large bowl, beat the eggs with a beater until fluffy. Mash the ripe bananas and add them to the eggs. Add the milk and vanilla and mix well. In another bowl, mix all dry ingredients and then add them to the wet ingredients. Pour the mixture into the loaf pan and bake for 45 minutes, or until a toothpick comes out clean when inserted into the middle of the loaf.
