- 1 buttercup squash, cut in half
- 2 Tablespoons olive oil
- 1 Cup red apples
- 3 Teaspoons brown sugar
- 3 Teaspoons butter, softened
- 1 Teaspoon lemon juice
Preheat the oven to 350 degrees F.
Cut your squash in half and remove the seeds and flesh and rub the inside of the squash with oil.
Combine apples with sugar, butter, and lemon juice. Pour ½ cup into each squash half.
Cover with foil and bake for 50 minutes or until squash is tender.
