The only thing that's worse than tomatoes not being in season is when you use out-of-season tomatoes in your salsa. This recipe solves that problem, providing you with a flavorful, spicy salsa with a hint of sweetness from kiwis.

Ingredients

  • 8 ripe but firm kiwis
  • 1 jalapeño, minced
  • 1/4 Cup cilantro, chopped
  • 1/8 Cup finely chopped sweet onion
  • Pinch of sea salt

Directions

Peel the 8 kiwis and trim the ends.

Finely dice the kiwi fruit. Now, this is why you want the fruit to be firm but ripe. Firm kiwifruit will dice like a cucumber. But dicing overly ripe kiwis is like trying to dice pudding.

Add all of the ingredients to a small mixing bowl and gently stir together.

Buying fruits in season when they are at the peak of their freshness make for great tasting food and can save you money.

Kiwi Cooking Tip

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
