Southwest Layered Pumpkin Dip

Everyone will be pumped up about this pumpking dip. It's a refreshing mix of pumpkin, diced chilies, and Chi-Chi's salsa. 

Ingredients

For the Layered Dip

  • 1 (15- ounce) can pumpkin
  • 8 Ounces cream cheese
  • 8 Ounces sour cream
  • 1 (4.25-ounce) can diced green chilies, drained
  • 2 Tablespoons green jalapeno wheels, chopped
  • 1 Tablespoon taco seasoning mix
  • 1 Cup shredded lettuce
  • 1 Cup shredded Mexican cheese blend
  • 2 Cups chunky salsa, such as Chi-Chi's Thick & Chunky Salsa Medium, drained

Directions

For the Layered Dip

In medium bowl, stir together pumpkin and cream cheese until well mixed. Spread mixture into 11x7-inch baking dish. 

In small bowl, stir together sour cream, jalepeños, green chilies and seasoning mix.

Spread over pumpkin mixture. Top with lettuce, cheese and salsa.

Cover; refrigerate several hours before serving. Serve with tortilla chips for dipping, if desired.
