A twist on a Midwest classic

Solid Serenade

The Tom & Jerry cocktail is a Wisconsin and northern Midwest tradition. The batter can be found in all the grocery stores and classic cocktail bars still have them on the menu. Presidio bartender Sam Lyden has riffed on the classic cocktail to create the Solid Serenade, which features tequila, sherry as opposed to the more traditional cognac and rum base.



  • Boiling water
  • 1.5 Ounces Tromba Añejo Tequila
  • 0.5 Ounce Lustau Oloroso Sherry
  • 1 Tablespoon CH Chile Amargo Batter*
  • Hot whole milk to fill glass
  • Cinnamon, grated

*CH Chile Amargo Batter

  • 12 eggs, separated for whites
  • 1 Teaspoon cream of tartar
  • 2 Pounds sugar
  • 3 Ounces CH Chile Amargo


Fill a Georgian glass with boiling water to temper glass and retain heat. 
When the glass is hot, dump the glass. 
Add tequila, sherry, batter, and top with hot milk.
Top with grated cinnamon.

Blend all ingredients to create a batter.
