- 1 Pound lobster meat, cooked and chilled
- 1/2 Cup mayonnaise
- 1/2 Cup Italian parsley, de-stemmed and chopped
- 2 Cups fresh spinach
- juice of 1 lemon
- 6 3-inch hotdog buns
Gingerly chop the lobster meat into bite-sized pieces.
Mix all ingredients except the buns together in a bowl and season with salt to taste.
Place about 3 ounces of lobster salad into each bun and serve.
