Ingredients
  • 1 pound lobster meat, cooked and chilled
  • 1/2 cup mayonnaise
  • 1/2 cup italian parsley, de-stemmed and chopped
  • 2 cup fresh spinach
  • juice of 1 lemon
  • 6 3-inch hotdog buns
Directions
  1. Gingerly chop the lobster meat into bite-sized pieces.
  2. Mix all ingredients except the buns together in a bowl and season with salt to taste.
  3. Place about 3 ounces of lobster salad into each bun and serve.
