Soby’s Mini Lobster Rolls

Ingredients

  • 1 Pound lobster meat, cooked and chilled
  • 1/2 Cup mayonnaise
  • 1/2 Cup Italian parsley, de-stemmed and chopped
  • 2 Cups fresh spinach
  • juice of 1 lemon
  • 6 3-inch hotdog buns

Directions

Gingerly chop the lobster meat into bite-sized pieces.

Mix all ingredients except the buns together in a bowl and season with salt to taste.

Place about 3 ounces of lobster salad into each bun and serve.
