Smoky Tennessee BBQ Tofu With Roasted Spring Onions

Tofu is the ideal substitute because it has a tough, meatier texture when it is patted dry and roasted.

Ingredients
  • 1 package extra firm tofu, such as house foods extra firm tofu, pressed so water is removed
  • 2 tablespoon olive oil
  • 1 tablespoon tamari (or soy sauce)
  • 1/2 cup smoky barbecue sauce
  • 1 bunch green onions, washed and patted dry
  • 1 1/2 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
Directions
  1. Preheat oven to 375 degrees. Cut tofu into 1/2 inch strips, widthwise. Mix together olive oil and tamari and brush each piece of tofu, all sides, with mixture. Place evenly on a sheet of parchment. Bake tofu for 10 minutes, flip, and bake another 10 minutes.
  2. While tofu is in the oven, coat onions in olive oil, salt, and pepper. Place on another sheet pan. Add the onions to oven, while you remove pan with tofu, and spoon BBQ sauce on each strip, liberally. Bake tofu for another 10 minutes (and you can add a little more sauce at end of baking if you’d like), along with the onions. Remove and serve together
