Ingredients

For the herbed cream cheese spread

  • 8 Ounces cream cheese, softened
  • 1/2 Cup plain Greek yogurt
  • 1/3 Cup chopped fresh herbs, such as chives, cilantro, parsley, and/or basil
  • 1/2 Teaspoon salt
  • 3 cloves garlic, minced
  • Zest and juice of 1/2 lemon

For the sandwiches

  • 3-5 cucumbers, preferably English or Persian, sliced
  • 1 loaf French bread, sliced

Directions

For the herbed cream cheese spread

Combine all of the ingredients in a bowl. Mix with a wooden spoon or an electric mixer until combined. (An electric mixer will create a light, fluffy dip, and mixing by hand will create a denser mixture, but both are delicious.)

For the sandwiches

Use flower-shaped cookie cutters (or other fun shape) to cut the cucumber slices. Spread the herbed cream cheese on the bread and top with the cucumber slices.
