This is a super simple side dish made of shredded carrots and tahini dressing. You can make extra tahini dressing and add it on salad, warm potatoes, and more.

Ingredients
- 1/4 cup lemon juice
- 1/4 cup tahini
- 1/4 cup olive oil
- 2 garlic cloves, minced
- salt, to taste
- pepper, to taste
- 3 pound carrots, shredded
- 2 tablespoon parsley, chopped
Directions
- In a bowl, whisk together lemon juice, tahini, olive oil, garlic, salt, and pepper.
- Toss the shredded carrots with dressing and add parsley right before serving.
