Shredded Carrots With Tahini Dressing
This is a super simple side dish made of shredded carrots and tahini dressing. You can make extra tahini dressing and add it on salad, warm potatoes, and more.
- 1/4 Cup lemon juice
- 1/4 Cup tahini
- 1/4 Cup olive oil
- 2 garlic cloves, minced
- Salt, to taste
- Pepper, to taste
- 3 Pounds carrots, shredded
- 2 Tablespoons parsley, chopped
In a bowl, whisk together lemon juice, tahini, olive oil, garlic, salt, and pepper.
Toss the shredded carrots with dressing and add parsley right before serving.
