This is a traditional scalloped potato recipe that will make the perfect side dish for weeknight dinners.
Preheat oven to 350 degrees F.
In a sauce pan melt the butter, add in the flour and blend until everything is incorporated. Whisk in the half and half and keep stirring until combined.
Season the milk mixture with salt and pepper. Bring the milk mixture to a boil, stirring occasional. Once it comes to a boil, lower the heat and stir in ½ cup of Cheddar cheese and the Colby Jack cheese.
Layer half the potatoes into a greased baking dish, add half the cheese mixture, layer the second half of the potatoes, and top with the rest of the cheese mixture. Add remaining ½ cup of Cheddar cheese on top.
Bake in the oven for 1 hour at 350 degrees.
