- 10 purple potatoes, cubed
- 2 medium red onions, cubed
- 2 Cups of vegetables in season, cubed
- 4 cloves garlic, crushed
- 4 Tablespoons olive oil
- 3 sprigs rosemary, finely chopped
- Salt and pepper to taste
Preheat the oven to 450 degrees.
In a large bowl, toss the vegetables, garlic, and rosemary in the olive oil and mix to coat. Spread the mixture evenly in a roasting pan. Season with salt and pepper.
Place in the oven and roast for roughly 20 minutes or until golden brown and thoroughly cooked.
