Rice-Cooker Frittata
Ingredients
  • 2 tablespoon olive oil, divided
  • 1 clove of garlic, minced
  • 1 cup kale, chopped
  • 1 onion, chopped
  • 1/2 cup feta
  • 6 large eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
Directions
  1. Heat a frying pan with 1 tablespoon olive oil, and add the garlic, kale, and onion. Cook until fragrant, about 5 minutes. Set aside.
  2. Grease the rice cooker with the other tablespoon of olive oil. Whisk together the eggs, salt, pepper, feta, and cooked vegetables. Pour the mixture into the rice cooker. Cook for one cycle.
