Red Enchilada Chile Sauce
Red Enchilada Chile Sauce made slightly smoky and spicy with the addition of chipotles in adobo sauce.
- 3 Roma Tomatoes
- 1 Clove Garlic
- 1/2 Cup Chicken, Beef or Vegetable Stock
- 1/2 Red Onion
- Pinch Mexican Oregano
- 1 Chipotle in Adobo Sauce + 2 Teaspoons Sauce
- 1 Teaspoon Fresh Lime Juice
1. Place all ingredients in a blender or food processor. 2. Process until smooth. 3. Place the sauce in a pan over medium heat and bring to a boil. 4. Reduce heat and allow to simmer until the sauce has the consistency of a thick pasta sauce.
