Quinoa Bowl With Spicy Peanut Sauce

Pair your favorite vegetables with a tangy and spicy peanut sauce

The “bowl” craze has taken over—and we’re not complaining. Bowls are customizable, and can be constructed based on your personal taste preferences. This recipe uses cooked chicken and quinoa, plus a variety of raw vegetables like cabbage, onion, and butternut squash, but feel free to mix-in whatever veggies you have on hand.


For the Base of Bowl

  • 4 Ounces cooked chicken
  • 1 1/2 Cup cooked quinoa
  • Purple cabbage, sliced
  • Onions, sliced
  • Mushrooms, cleaned, sliced
  • Parsley
  • Bean Sprouts
  • Butternut Squash, cubed

For the Spicy Peanut Sauce

  • 4 Tablespoons reduced-fat peanut butter
  • 3 Teaspoons soy sauce
  • Juice of half a lime, or 1 packet of True Lime crystallized citrus
  • 1/4 Teaspoon red pepper flakes
  • 4 Tablespoons water


For the Base of Bowl

Mix together quinoa, onions, purple cabbage, mushrooms, sprouts and butternut squash.

Add sliced chicken on top.

Sprinkle on parsley.

Drizzle sauce over bowl

For the Spicy Peanut Sauce

Mix together peanut butter, soy sauce, True Lime and red pepper flakes.

Microwave for 30 seconds.

Stir or whisk with fork.

Add water to desired consistency.
