Ingredients
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 portuguese sausage, sliced into circles
  • 16 ounce frozen sweet peas
  • olive oil, portuguese preferred
  • 2 eggs
  • kosher salt, to taste
  • white wine
Directions
  1. Saute onions in a drizzle of olive oil, over medium to low heat, until soft, or about 5 minutes.
  2. Add sausage and saute until cooked, or about 10 minutes.
  3. Add the garlic, stir.
  4. Add peas and pour in about a cup of white wine, more or less, depending on how saucy you like the dish.
  5. Lower the heat and cook until warm, or about 3 minutes. Give a stir.
  6. Gently crack eggs on top of the peas and cover with a lid. Cook until whites are cooked and yolks still runny, or about 3 minutes.
  7. Serve and eat.
