Using the same principle as a turkey roll-up or pinwheel, these pizza roll-ups ditch the crust for a low-carb whole-wheat tortilla and pack in the protein with low-fat cheese. To make this delicious treat, which packs well in your child’s lunchbox or your grown-up lunch bag, gather the essential ingredients: low-carb whole-wheat tortillas, prepared pizza sauce, low-fat mozzarella, and any toppings (i.e. spinach, mushrooms, or pepperoni).
- 1 low-carb whole wheat tortilla
- 2 1/2 Tablespoons pizza sauce
- 1/4 Cup low fat mozzarella cheese
- 3 slices of pepperoni
- 1/4 Cup fresh spinach
Spread a thin layer of pizza sauce on the tortilla. Layer the tortilla with your toppings and cheese. Cook your prepared tortilla on a microwave-safe plate in the microwave for about 20 seconds or until the cheese has melted. Remove from the microwave and roll up the tortilla. Cut into three or four manageable pieces. Eat right away or save for later to enjoy a delicious pizza snack.
