Ingredients
  • 1 1/2 cup all-purpose flour
  • 3 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cup milk
  • 1 egg
  • 3 tablespoon butter, melted
  • 3 ounce pineapple, diced
  • 3 ounce mango, diced
  • 3 ounce blueberries
  • 1 strawberry, sliced
  • 1 tablespoon sour cream
  • 1 ounce rum, such as bambarra rum reserve
  • 2 ounce maple syrup
  • fresh mint
Directions
  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot
  3. Mix the rum and maple syrup together
  4. Diced the mango and pineapple
  5. Dress the fruits on top of the pancakes, pour the syrup, the sour cream and mint.
