Pineapple and Mango Rum-Glazed Pancakes

You don’t need to be on vacation to have a tropical breakfast

Staring off into a turquoise ocean makes all of life’s troubles melt away; taking a bite of these tropical, pineapple and mango rum-glazed pancakes will hopefully have the same effect.


For the Pineapple and Mango Pancakes

  • 1 1/2 Cup all-purpose flour
  • 3 1/2 Teaspoons baking powder
  • 1 Teaspoon salt
  • 1 Tablespoon white sugar
  • 1 1/4 Cup milk
  • 1 Egg
  • 3 Tablespoons butter, melted
  • 3 Ounces pineapple, diced
  • 3 Ounces mango, diced
  • 3 Ounces blueberries
  • 1 Strawberry, sliced
  • 1 Tablespoon sour cream
  • 1 Ounce rum, such as Bambarra Rum Reserve
  • 2 Ounces maple syrup
  • Fresh mint


For the Pineapple and Mango Pancakes

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot

Mix the rum and maple syrup together

Diced the mango and pineapple

Dress the fruits on top of the pancakes, pour the syrup, the sour cream and mint.
