The classic sandwich found in lunchboxes across America each day is being reinvented in the form of fudge. You won’t be able to resist this peanut butter and jelly combination, although it is slightly richer than that Wonder Bread sandwich you are used to eating.

  • 12 Ounces white chocolate chips
  • 7 Ounces marshmallow cream
  • 1 Cup smooth peanut butter
  • 3/4 Cups unsalted butter
  • 2 1/2 Cups sugar
  • Pinch of salt
  • 3/4 Cups heavy cream
  • 3/4 Cups jam

Prepare an 8-inch square pan by lining it with parchment, set aside.

Combine the white chocolate, marshmallow cream, and peanut butter in a large mixing bowl, and set aside.

Then, combine the butter, sugar, salt, and whipping cream in a large pan over medium-high heat. Bring to a boil while stirring. Boil for about 3 to 5 minutes. Pour the mixture over the chocolate and marshmallow cream. Beat with an electric mixer for about 1 to 2 minutes, until creamy.

Pour half the mixture into the prepared pan, and then top with the preserves. Top with the remaining fudge, and use a knife to swirl the jam.

Refrigerate for about 4 hours, or until firm. Then cut and serve!

Peanut Butter Shopping Tip

If you're looking for a smoother texture in your finished product, try using confectioners' sugar (also known as 10x sugar) instead of granulated sugar.

Peanut Butter Cooking Tip

Think beyond cakes and pies – fruits like peaches, pineapple, and figs are excellent grilled – brush with melted butter or wine and sprinkle with sugar and spices for a dessert that you can feel good about.
