Pea and Ricotta Spread is a lovely springtime appetizer that is easy to make. The green peas and mint add a vibrant springtime freshness, and this spread is perfect served over crusty bread, or even with veggies.

Ingredients
- 12 ounce frozed peas, thawed, or fresh shelled peas
- 1 garlic clove
- 2 fresh mint leaves, more to taste
- 2 teaspoon lemon zest
- 1 tablespoon olive oil
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1-1/2 cup ricotta cheese
Directions
- Add all the ingredients to a food processor and blend so the mixture is combined, but slightly chunky.
- Taste and adjust the seasoning as needed.
- Serve as a spread for fresh crusty bread, toasted baguette slices, crackers, or with veggies.
