Oven-Roasted Rosemary Potatoes
Set it and forget it. Stick these taters in the oven and let them crisp up while you focus on the rest of your meal. Use a mixture of sweet and regular potatoes to add color and flavor to your dinner.
- 2 sweet potatoes, sliced 1/4-inch thick
- 2 Yukon Gold potatoes, sliced 1/4-inch thick
- 2 Tablespoons minced garlic
- 1 Cup diced shallots
- 1 Tablespoon olive oil
- 1 Tablespoon dried rosemary
- Dash of sea salt
- Dash of black pepper
Preheat the oven to 350 degrees.
In a large bowl, mix together the potatoes, garlic, shallots, and olive oil. Transfer to a large baking dish and season with the rosemary, salt, and pepper.
Place in the oven for 20 minutes. Stir and place back in the oven for 20 more minutes. Enjoy with fish or steak.
