Our next blueberry recipe in our series is a riff on our favorite childhood Southern treat, Ooey Gooey Butter Bars. We add blueberry jam to take these bars from everyday to a special summer dessert. We promise you won't have any leftovers.

Ingredients

For the bottom layer

  • 1 box Miss Jones Organic Vanilla Cake Mix
  • 1/2 Cup butter, melted
  • 1 egg
  • 2 Tablespoons water
  • 1/4 Cup blueberry jam

For the top layer

  • 1 stick cream cheese
  • 1 Pound box powdered sugar
  • 2 eggs
  • 1 Teaspoon vanilla
  • 1/4 Cup blueberry jam

Directions

For the bottom layer

Preheat oven to 350 degrees F. Mix together cake mix, butter, eggs, and water until mixture forms a dough. Gently press dough into the bottom of a greased 13x9" cake pan. Spread a thin layer of jam over the top of the dough.

For the top layer

With a hand or stand mixer, beat cream cheese until smooth. Add powdered sugar, eggs, and vanilla, and mix again until smooth. Pour over dough layer. Dot with dollops of blueberry jam and then gently swirl. Bake for 25 to 25 minutes or until top layer starts to brown. Cool completely before serving and store in the refrigerator. Bars are best served cold.

Blueberry Shopping Tip

Buying fruits in season when they are at the peak of their freshness make for great tasting food and can save you money.

Blueberry Cooking Tip

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
