Ingredients
  • 1 cup caster (superfine) sugar
  • 5 1/2 fluid ounces white rum
  • 3 limes, cut into thin wedges
  • 40 mint leaves, plus 8 sprigs
  • ice cubes
  • 4 cup lager beer
Directions
  1. Pour 1/2 cup water into a saucepan and bring to the boil. Add the sugar and stir to dissolve. Remove from the heat and allow to cool completely; the sugar syrup will thicken slightly on cooling.
  2. Add the rum to the sugar syrup and stir to combine.
  3. Divide three-quarters of the lime wedges and the mint leaves among eight tall glasses. Muddle the lime and mint leaves to release the lime juice and mint oils. Add ice cubes to each drink, then pour the rum-sugar syrup over the top. Slowly top up each glass with the beer.
  4. Pop in a sprig of mint and a couple of lime wedges and serve.
