Mixed Veggie and Chicken Quesadilla

Load these quesadillas with your favorite vegetables for and easy and satisfying grilled meal

Sneak vegetables into these fun and tasty quesadillas by Haylie Duff. These are a great way to get kids to eat (and enjoy) their vegetables!

Ingredients

  • One 13-ounce pouch Libby’s mixed vegetables
  • 1 tortilla
  • 1/2 Cup jack cheese, shredded
  • 1/3 of a bell pepper, diced
  • 1 small grilled chicken breast, diced

Directions

Microwave Libby’s vegetable pouch according to the package instructions.

Warm a cast-iron skillet to medium heat.

Add a small pat of butter to skillet.

Place the tortilla flat in the skillet.

On one side of tortilla, layer the jack cheese, mixed vegetables, grilled chicken (diced), and diced red bell pepper.

Fold over the other side of the tortilla and warm until the tortilla is slightly browned and the cheese has melted.
